This 2-kilometer walk will be take us through the Saint Germain des Prés district with a guided tour (in French) by our guide, presenting the sights, monuments and history of the area, such as the Ecole Nationale Supérieure des Beaux-Arts or famous places such as the Café de Flore or the Deux Magots.
This tour is highlighted by the visit of a totally new kind of breeder-butcher shop, not far from the passage de la Petite Boucherie, whose name comes from the old meat stalls set up in the Saint-Germain district in the 19th century. The owner breeds his own high quality meat, which he ages with a unique process of intra-cellular crystallization called hibernation that preserves all the flavor of the meat…
His shop gives birth to a new era of the butchers, an era that uses years of laboratory research, technology and genetic knowledge but also family know-how handed down with passion for 6 generations. Our visit will be completed with comments and explanations by a specialist, and of course a dégustation of the flavorsome meat.
